The App saves basic local records, such as scores and match statistics, locally in the secure sandbox of your devices (using standard iOS/watchOS UserDefaults). Data synchronization between the iPhone and Apple Watch is executed directly via Apple's official WatchConnectivity framework over Bluetooth or local network, without passing through any external servers.
